Baked Oatmeal

3 Cups quick rolled oats
2 Tsp. baking powder
1 Tsp. salt
1/3 Cup melted butter
1 Cup packed brown sugar
1 Tsp. ground cinnamon
1 Cup milk
2 eggs, beaten
Mix all ingredients together and pour into a buttered 9"x9" baking pan. Bake at 350 for 35-40 minutes. Serve warm with milk or applesauce. For variety, swirl in jam, peanut butter or flavored syrup before baking. Chopped dried fruits or nuts add a nice texture.
(I used regular oats and it worked just fine. I also added raisins before baking. Make sure you mix well. I didn't and got all the salt in my bowl, blech.)

Taco Meat

3 to 5 lb Roast
1 teaspoon of cumin
1 teaspoon of chili powder
1/2 teaspoon of salt


Mix together cumin, chili powder and salt. Place roast in crock pot and rub the seasoning all over the roast. Cook on low for 8 to 10 hours. I find that I have to cook my meat for a long time. Shred meat and use for tacos or burritos!

Graham Crackers!

This recipe is from a booklet our church puts out. You can go here to see the book.
I changed it a little bit!

Mix together:
1⁄2 cup evaporated milk
(or 1⁄3 cup dry milk powder plus 1⁄2 cup water)
2 tablespoons lemon juice or vinegar

Mix the following ingredients in the order listed. Blend
well to keep oil in emulsion.
1 cup brown sugar
1⁄2 cup honey or white sugar
1 cup oil
2 teaspoons vanilla
2 eggs, beaten slightly

Combine above two mixtures. Add the following:
6 cups whole wheat or graham flour
1 teaspoon salt
1 teaspoon soda

Divide mixture into four equal parts. Place each part on
a greased and floured cookie sheet. Roll from center to
edges until about 1⁄8 inch (0.3 centimeters) thick. Prick
with a fork.
Bake at 375°F (191°C) for about 15 minutes or until
light brown. Remove from oven and cut in squares
immediately. Makes 60 crackers.

Peanut butter Balls

These peanut butter balls are super easy to make! My Husband a kids love them. To make, mix 1 cup of peanut butter and 1 cup of Honey together.





Then add 2 cups of powder milk and mix thoroughly, when it is to hard to mix with a spoon use your hands and knead it like dough.



Store in an air tight container

Beefy Noodles


2lbs beef stewing meat
1 package of Lipton onion soup mix
1 can of cream of mushroom soup
1/2 cup water

Put in crock pot and mix together. cook on low for 6 to 8 hours.
Before serving add one cup of sour cream and mix together.

We like to eat this over egg noodles but it would be good over potatoes too.

Biscuits


I found this recipe on allrecipes.com. It was very easy to make and tasted really good. I even had some with a little jam, mmmmmm!
  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 3 teaspoons sugar
  • 1/2 teaspoon salt
  • 1/2 cup shortening
  • 1 egg
  • 2/3 cup milk

  1. In a small bowl, combine the flour, baking powder, sugar and salt. Cut in shortening until the mixture resembles coarse crumbs. Beat egg with milk; stir into dry ingredients just until moistened.
  2. Turn onto a well-floured surface; knead 20 times. Roll to 3/4-in. thickness; cut with a floured 2-1/2-in. biscuit cutter(I used a canning jar, you can also use a cup). Place on a lightly greased baking sheet. Bake at 450 degrees F for 8-10 minutes or until golden brown. Serve warm.

Pop Up Pancakes



These pop up pancakes are actually German pancakes baked in a muffin tin.
Here's how you make them:

Pop Up Pancake Recipe - makes 24 muffins or fills a 9×13 baking pan

1 cup milk
1 cup flour
6 eggs
1/4 cup melted butter
dash salt
Preheat oven at 400

Combine all ingredients in a blender (it works best) and blend together. Then grease your muffin tins or baking pan. Bake them for 15 minutes, or until puffy and golden on top. Top with your favorite pancake toppings (syrup, powdered sugar, and fruit).

Macaroni and Cheese

This is my favorite macaroni and cheese recipe!

1 cup of Magic Mix
1 1/2 cups of water
combine in a sauce pan and cook until it starts to thicken.

Add 2 cups of grated cheese
1/4 cup of Parmesan cheese
1-2 Tablespoons dry onion
Mix until cheese is melted. Mix with cooked macaroni (2 cups dry)
Top with bread crumbs (if you have Italian seasoning add some into the bread crumbs).
Bake at 350 degree for 20 to 30 minutes!

It is really good when you mix in some Ham!

Individual Meatloafs

I got this idea from my Mom. Individual meatloaf. You can use your favorite meat loaf recipe or the one below.

2 pounds of ground beef
1 cup bread crumbs (make your own crumbs here)
2 eggs
2 Tablespoons Worcestershire sauce
2 Tablespoons milk

Mix all together. Grease 24 muffin tins and divide up the meat and place in muffin tin. Cook at 375 for 30 minutes. You can top with ketchup, BBQ sauce and cheese. Everyone in my hose like it different so I made a few of each.

Bread Crumbs

Use a blender or food processor to make fluffy soft bread crumbs. makes 3/4 cup.

For fine dry bread crumbs arrange 1/2 inch bead cubes in a single layer on a cookie sheet. Bake in a 300 degree oven for 10 to 15 minutes or until dry. Let cool. Place in a blender or food processor blend into fine crumbs. makes 1/4 cup of fine crumbs.

Chili

  • 3 cups dry pinto beans ( or a combination of black beans and pinto beans)
  • 1 Bay leaf
  • 2 teaspoons salt
  • ½ teaspoon garlic powder
  • 1lb. Hamburger
  • 1 onion
  • 1 can of tomato sauce
  • half a can of whole tomatoes cut up and drained
  • ¼ Cup chili powder
  • 2 Tablespoons brown sugar
  1. Soak dry pinto beans in water overnight. Drain.
  2. Place soaked beans in Crockpot, Cover with water.
  3. Add: 1 Bay leaf, 2 teaspoons salt, ½ teaspoon garlic powder
  4. Cook 8 hours on low.
  5. Cook 1lb. Hamburger until no longer pink. Skim off fat. Add 1 large, chopped onion. Pour into beans.
  6. Add: 1 Can tomato, 1/2 Can of whole tomatoes, drained and cut up, ¼ Cup chili powder, 2 Tablespoons brown sugar
  7. Cook until hot and thickened.
Be careful not to have to much water when you start adding the ingredients, or it will be to soupy!

Chicken Alfredo

You will need:

1 cup of magic mix
1 1/2 cups water
combine in a sauce pan. Cook until thicken.
Add one cup of Parmesan cheese and some garlic.
I happen to have 2 cloves of garlic so I used that.

I cooked up a chicken in the crookpot and added the meat.
Broccoli would be an added bonus, which we get on occasion.

I cooked up half a bag of egg noodles.
The whole family loved it.
I know it must be good when everyone eats it!

Magic Mix

We made this in relief society as one of our activities. I was unsure of it at first, but I am pleasantly surprised. I am really enjoying it! Basically it is a recipe for a white sauce, but in a very convenient way. I have made several dishes ( Mac and Cheese, Alfredo sauce, potato cheese soup, biscuits and gravy and "Fudgeficles") with it so far and will be posting them soon. First you will need to make up the magic mix

2 1/3 cups powdered milk
1 cup flour
1 cup butter
Combine all ingredients in large bowl mix using beaters.
Store tightly covered in the refrigerator.

Magic Mix white sauce
2/3 cup Magic Mix
1 cup water
In saucepan combine Magic Mix an water, use a wire whisk.
Stir rapidly over medium heat until it starts to bubble.

Layered Jello



This is a fun and easy to make jello. You can make it festive for Christmas by layering red and green, or even make a rainbow by layering a few different colors. I made this one in an 8x8 pan. If you want to layer more than one jello use a 9x13 pan. Enjoy!!

6 oz. package of jello
2 1/2 cups of boiling water
1/3 cup sour cream

Mix jello and boiling water together until jello is dissolved. Pour all but 1 cup of jello into pan and let set. When the 1 cup is cooled mix in 1/3 cup of sour cream, I use a whisk to do this. Then pour over set jello.
Repeat to add another layer. When adding another layer be sure to lett it cool before pouring over the set layer.

Peanut Butter Cookies

This is the best peanut butter cookie recipe that I have had! My Husband loves them so much he will even make them himself! The recipe calls for quick oats, but if you take your rolled oats and put them in your blender and blend them up a bit they should work just fine! Hope you enjoy these YUMMY cookies!

2 Cups Quick-cooking Oats
2 Cups All-purpose Flour
1 Teaspoon Baking Powder
1 Teaspoon Baking Soda
1/4 Teaspoon Salt
1 Cup Butter, or margarine or shortening
1 Cup Peanut Butter, creamy or crunchy
1 Cup Granulated Sugar
1 Cup Brown Sugar, firmly packed
2 Each Eggs
3 Teaspoons Vanilla Extract
2 Cups Peanut Butter Chips, or chocolate chips (Optional)

1. Preheat oven to 350ºF.

2. In a small bowl, combine oats, flour, baking powder, baking soda and salt; set aside.

3. In a large bowl, with an electric mixer on medium speed, beat butter and peanut butter until smooth. Beat in sugars, then eggs and vanilla until blended. Beat in flour mixture just until blended. Stir in peanut butter chips.

4. On ungreased baking sheets, drop dough by rounded tablespoonfuls, 2 inches apart.

5. Bake for 13 minutes, or until golden. Remove the cookies to a wire rack and let cool completely.

6. Makes 6 dozen.

Corn Dog Muffins

When I first saw this recipe I didn't think it sounded very good. Why I decided to try it I don't know. It was surprisingly good! I really liked them. My son will eat them but my daughter is a little more pick. She likes them separate. You will need corn meal. For those of you that have a WinCo, I believe you can buy corn meal for about .61 cent's a pound, not a bad price if you ask me! Here is the recipe.

1 1/2 cups flour
2/3 cups sugar
1/2 cup corn meal
1 Tablespoon baking powder
1/2 teaspoon salt
1 1/4 cup milk
2 eggs
1/3 cup oil
3 Tablespoons butter

Combine flour, sugar, corn meal, baking powder and salt in a medium bowl and mix. Combine milk, eggs, oil and butter in a small bowl and mix well.

Add 1 cup of cheese. The recipe says to use 9 hot dogs cut in half and stick them in the middle of the muffin. I like to cut up the hot dog and mix it in the batter and I do not use 9 hot dogs, but I can't remember how many I put in.

Preheat oven to 400 degrees. lightly grease muffin tins. fill muffin tins 2/3 full. Bake for 14 to 18 minutes.

Rice Pudding!

This recipe was given to me by my Mother-in-law. She has made it several times and raves about it. It sounds really good.

Warm 1/2 gallon of milk on high in the crockpot for one hour (you can make up some powdered milk an use it if you want).
Add 1 cup of rice
1 cup of sugar
(optional - I put in once stick of cinnamon)
and continue to heat on high for 3 hours.
While this is cooking remove 4 eggs from the fridge to bring to room temperature

By this time the rice should be fully cooked and will have absorbed most of the milk

Mix together
4 well beaten room temperature eggs
1/4 cup milk
1/4 teaspoon salt
1 tablespoon vanilla extract

Stir in about 1/2 cup of the cooked rice and milk into the egg mixture to "temper it"
Then while stirring the rest of the cooked rice slowly add the egg mixture.

Keep the crockpot on high and stir until it is nice and thick.

You can eat it right away (after it cools, of course) or pour into a buttered
9x13 glass dish and cover very loosely and let cool.
Then cover and refrigerate. It can be warmed up by the dish full in the microwave.

We serve it with cinnamon sugar and your choice of
milk
cream or
whipped cream (for a special treat we did this as dessert for the missionaries)

Macaghetti

This really is not a recipe but an idea! My kids are not big on spaghetti but I thought I would try this any way. They are the ones that actually came up with the name Macaghetti, and they actually liked it. You can use sausage or ground beef. I liked the sausage put the kids thought it was too spice. So I cooked up some macaroni noodles and mixed Spaghetti sauce, meat and the noodles together. It was fast easy and delicious!

Tasty Buns

These are very easy to make. They make great hamburger buns and even hot dog buns. In the picture above I actually made 24 rolls. I like to use parchment paper when possible, but it is not necessary you can grease the cookie sheet.

4 1/2 cups all-purpose flour
4 1/2 teaspoons yeast
1 cup milk
3/4 cup water
1/2 cup vegetable oil
1/4 cup white sugar
1 teaspoon salt

1. Stir together 2 cups flour and the yeast. In a separate bowl heat milk, water, oil, sugar and salt to lukewarm in microwave or on top of stove. Add all at once to the flour mixture and beat until smooth (about 3 minutes).
2. Add enough flour to make soft dough (2-3 cups). Mix well and let rest in bowl for about 10 minutes.
3. Shape into 12 slightly flat balls and place on greased baking sheet to rise until doubled in size.
4. Bake in a preheated 400 degrees F (205 degrees C) oven for 12 to 15 minutes.
Makes 12 buns (48 buns) My directions... Warm milk, water, and sugar. Add to mixer bowl stir in yeast to soften. Add oil and salt and gradually knead in flour. Form into buns, place on lightly greased pans, let rise, and bake at 400º for 10-12 minutes

Banana Bread

This recipe makes 4 loaves. I have cut the recipe in half and made 2 loafs and it turned out just fine!

1/4 cup sugar
1 teaspoon cinnamon
3/4 cup butter
3 cups sugar
3 whole eggs
6 whole bananas, very ripe, mashed
16 ounces sour cream
2 teaspoons vanilla extract
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 tablespoon baking soda
4 1/2 cups all-purpose flour
1 cup chopped walnuts (optional)

1 Preheat oven to 300 degrees F (150 degrees C). Grease
four 7x3 inch loaves pans. In a small bowl, stir together 1/4
cup white sugar and 1 teaspoon cinnamon. Dust pans lightly
with cinnamon and sugar mixture.
2 In a large bowl, cream butter and 3 cups sugar. Mix in
eggs, mashed bananas, sour cream, vanilla and cinnamon. Mix
in salt, baking soda and flour. Stir in nuts. Divide
into prepared pans.
3 Bake for 1 hour, until a toothpick inserted in center
comes out clean.

Oven Apple Pancakes


This is a yummy recipe that we have eaten for breakfast, lunch and dinner! It takes a little prep work, but it is worth the effort! Hope you like it too!

1 apple, cored and sliced
1 tablespoon butter
4 tablespoons sugar, divided
3/4 teaspoon cinnamon
3 whole eggs
1/3 cup flour, all-purpose
1/4 teaspoon salt

Spray 9-inch glass pie dish with pam then put butter in pie dish and place in oven, turn oven on to 450º. After butter melts combine 2 tablespoons of sugar and cinnamon and stir into butter. Add apple slices and coat with butter mixture. Place back in oven for 4 minutes. Meanwhile mix eggs, salt, flour and remaining 2 tablespoons of sugar. When apples are cooked pour the batter around the edges and then in the middle of the apples. Bake for 10 minutes then turn the oven down to 350º and bake for 4-6 minutes more. Enjoy!!!
